What air-drying is
Air-drying removes moisture slowly, with gentle heat and time — not high-speed cooking, chemicals or smoke flavours. It's a slower, more careful way to make a treat, and it's why a Pudel cut still smells like the protein it is, and nothing else.
Air-dried vs dehydrated vs freeze-dried
Freeze-drying pulls moisture out at very low temperature and leaves a brittle, airy texture. Dehydrating typically uses higher heat and moving air, which changes the texture and flavour more. Why it means no preservatives — and no fridge
