Necks are dried whole, bone and all: meat, skin, cartilage and the small vertebrae through the middle, with a proper crunch. Bone naturally contains calcium, and cartilage is where glucosamine naturally occurs.
Dried bone can still splinter or be swallowed whole, so necks are for dogs that chew rather than gulp. Supervise, size the chew to the dog, and take away any piece small enough to swallow whole. Adult teeth in.

Feeding
Treats are a reward, not a meal. Keep all treats to about 10% of your dog's daily food, and a little less for liver, which is rich. Feed alongside their regular diet with fresh water out.
